2nd Plate

This is the second plate from our afternoon tea–style lunch, served on a particular day.

As previously mentioned, during the period when we use heaters inside the restaurant, we temporarily remove only the second plate after serving the afternoon tea stand, in order to keep it warm in the kitchen.
Each dish is prepared at a temperature that avoids over-denaturing the proteins, so we do not serve the food piping hot but rather keep it gently warm. Still, we believe this method is effective in preventing the dishes from becoming too cold.

To be honest, the issue stemmed from my underestimating the temperature inside tridor, assuming it would be similar to our previous location. With that in mind, we’re fully prepared to ensure a more comfortable experience for our guests this winter—though summer is coming first!
