This dessert is an interpretation of a crêpe traditionally found in the Asturias region.
A matcha crêpe is filled with gyūhi, matcha tocino de cielo (a custard-like dessert), and Shumari azuki beans scented with anise liqueur.
The original dessert is quite rustic, so this version involves a fair amount of reinterpretation.
That said, unless you dislike matcha, I believe it is a dessert most guests will enjoy.
