This is an introduction to one of the finger foods from our dinner course.
This dish is a reinterpretation of “truffle tortilla,” composed of a potato galette, a truffle-infused egg yolk, and a black truffle “imitation.”
The imitation black truffle is made by combining house-made truffle oil with dextrin and coating it with powdered black truffle.
