A featured dish from our Afternoon Tea-style lunch.
A seasonal dish featuring hamo (pike conger), this preparation combines sautéed artichokes, shallots, and dill, all infused with an aromatic aliñada marinade (a spiced vinaigrette). The hamo is deep-fried, finely chopped, and mixed with semi-dried tomatoes to complete the dish.
We use a mix of imported artichokes and ones grown nearby by a local producer. I used to grow them myself as well, so it feels special to be able to include them in our dishes.
