A featured dish from our Afternoon Tea-style lunch.

n Spain’s Basque Country, there is a traditional dish known as “Marmitako.”

Marmitako is a traditional Basque dish of tuna, potatoes, and vegetables simmered in a tomato broth. Our version reinterprets this classic: the tuna is minced with capers and paprika powder, then covered with a potato mousse and finally coated in a tomato sauce rich with vegetables.

Because simmering lean tuna tends to make it dry, I looked for another way to bring out the essence of Marmitako, which led me to this style of preparation.
