A glass dessert inspired by the Piña Colada, combining coconut tocino de cielo, rum-infused galette bretonne, and a light pineapple foam.
Since this dessert was created with “summer” in mind, I had planned to offer it only through the end of August. However, given how hot it still is, I am reconsidering extending it for a little longer.
