Petit Fours from a Recent Dinner Service

Introducing the petit fours served at the end of our dinner course.

From left to right:

The first is a polvorón sandwich. Polvorones are a traditional Spanish Christmas sweet. Here, the polvorón is flavored with matcha and filled with matcha crème mousseline.

In the center is a Spanish turrón, a traditional nougat, wrapped in pâte brisée and baked.

On the right is a tart with a black cocoa crust, layered with ganache, fig compote, and a red wine jelly sheet.

I aim to create petit fours that feel light enough to enjoy at the end of the course, while still leaving a lasting impression.
