This dish pairs a Hatcho miso langue de chat (known in Spain as lengua de gato) with house-made sobrasada and a canola blossom mousse.
Sobrasada is a type of sausage from Mallorca, characterized by its soft, spreadable texture.
To better harmonize with the canola blossom mousse and to contrast with the crisp texture of the langue de chat, the sobrasada is prepared in a smoother, more paste-like form than the traditional version.
